Okay, my brother and I who are maybe slightly competitive are having a chili cook off. What is your recipe for chili? What is your secret ingredient?

I have a great recipe (claimed to be a family recipe, but almost certainly not actually from my family) for a white chili that has tomatilloes, black-eyed peas, and chicken. If nothing else, it would stand out as different from the other folks' offerings, which would be helpful. I'll send you the recipe.

I want to make a pot of chili with shaved, dark chocolate (at least 75% cacao) in it, Sheena. I've tried some dark chocolate bars with chili peppers in it and it was awesome so I'd venture to say that chili with chocolate should be wonderful too! :)

I haven't actually made a pot of chili with chocolate in it yet but I want to, but I'm sure it would be somewhat similar to mole. When we made mole, I couldn't taste the chocolate in it.

If you haven't tried a chocolate bar with chili peppers in it, I hope you'll consider doing so. It's exquisite!!

Not traditional, but made with minced (ground) lamb, and spiced with lots of cumin and smoked paprika (pimenton) as well as chilli and coriander. Dark choc sounds good, Sheila!

Cooked ground beef and pork, then trained. Add hot pepper oil (store bought or made at home) and all the other ingredients, you need to make chili. Finally, the one special ingredient, Keebler Club Crackers, crushed. Not the Premium saltines or unsalted crackers.

The Keebler Club crackers will help reduce the flames in your mouth and still taste great.

I never heard of putting crackers of any kind in chili, Phil, but I'm sure it would be good. :)

It could be a north eastern (U.S.) thing. Once the chili is done, the we crush Keebler Club crackers on top of a bowl of chili. It adds the crunch to chili. You bet it taste, great! :)

Best chilli ever:

Jamies brisket chilli

Ingredients:
1.5kg beef brisket
1 tbsp salt
1 tbsp pepper
1 tbsp cumin
1 tbsp Smoked paprika 
1 tbsp oregano

2 cans of chopped tomatoes
1 can beef stock
2 yellow peppers
2 red peppers
1 Stick of cinnamon
2 Bay leaves

2 onions
4 cloves of garlic
2-4 chillies

Bunch of coriander

Instructions:
- Score fat 1.5cm deep chess board
- Season with salt, pepper, cumin and Smoked paprika and oregano
- Fry on medium heat with olive oil - Fat side down
- In a separate pot, fry up leftover spices, tomatoes and beef stock with peppers, cinnamon and bay leaves
- Remove gold brown brisket and place in vegetable pot at hot heat
- Add onions, chillies and garlic to brisket juices and fry up then add to pot
- Add tons of coriander when boiling
- Turn to really low heat with lid on and simmer for 4hrs

I once saw the recipe for chili for the Texas prison system. It only had two ingredients - beef and ground dried chile peppers.

A chili was only worthy of the name, according to the Texans I knew years ago, when flies passing over the bowl would drop dead as they reached the other end of the bowl. The optimum strength would allow them to continue on long enough to clear the bowl. I'm not saying the stuff was over the top, but my first Texas chili experience left my tongue numb for over a week. They thought my screams were funny =8-o

Swap the ground meat for beef brisket, cook it for ages on a low temperature until the brisket falls apart... Much much nicer than ground meat. :)

I just remembered a chili recipe from the Cooks Illustrated/America's Test Kitchen people which I meant to try out but never got around to. These people test the hell out of recipes before they release them, so it should be good, and it is their favorite chili. It has some of the suggestions people have already made, like beer and chocolate (in the form of cocoa powder) and others such as molasses and corn meal. It also uses homemade chili powder from dried chiles instead of commercial chili powder. It can be found at Our Favorite Chili.
